Seasonal depression is going to kick in soon if it hasn't already, and you NEED some good comfort cookies. Don't fight it - it's the truth! I've recently perfected a cookie recipe and I'm making them way too frequently now. They are so soft, chewy, easy to make, absolutely delicious, and I even have a trick for keeping them around to make life even easier. You have to try these!
I'm kinda a hoe for brown sugar and vanilla extract, so I go a little heavy handed on those rather than following this recipe exactly. I mean, it's really not that serious!!! I swear the brown sugar is what makes these so rich and fabulous!
Ingredients
- 2 1/4 cups flour
- 1 tsp baking soda
- 3/4 cup butter (softened)
- 1 cup sugar
- 1/2 brown sugar (packed)
- 2 eggs
- 2 tsp vanilla extract
- 1 tsp salt
- 1 cup chocolate chips (roughly - measure this with your heart)
Instructions
- Mix together flour, baking soda and salt - set aside
- Cream together the sugar, brown sugar and butter
- Add the vanilla and eggs one at a time until fully incorporated
- Slowly add the flour mixture until fully incorporated
- Fold in the chocolate chips, or mix in of choice
- Using a 2 inch cookie scoop, add to a lined baking sheet (I like to use a silicone mat or parchment paper)
- Sprinkle a tiny bit of salt on top of each dough ball
- Put your dough balls in the freezer
- Turn the oven on to 350 degrees. Let the dough balls sit in the freezer while the oven preheats! (this step is not required but it's what helps the cookies from spreading too flat and keeps them thick and chewy!)
- Cook for 12-13 minutes
- Remove from oven and place on a cooling wrack
Tricks for your busy life
- Save extra dough in the freezer! Once the balls have been in the freezer for about 30 minutes, transfer to a gallon size freezer bag and keep in the freezer until you want to bake again. Often times I will double or triple the recipe since I already have everything out and keep a bunch of extras in the freezer. Whenever you are craving cookies, pull out the number of frozen dough balls and cook for 13 minutes on 350 degrees. I swear by this method!
- Store cooked cookies in an airtight container. If you want the cookies to remain soft for multiple days, stick a piece of bread in the container to absorb the air!
